Brought to you by Chris & Michele Redding, the owners of Cuckoo's Chicken House & Waterin' Hole and The Animas City Theatre, The Roost opened June 12, 2018, offering affordable, casual dining in a fun, downtown location. The Roost offers a wide variety of appetizers, salads, sandwiches, and entrees. Pair your meal with a glass of wine, craft beer or signature cocktail. Finish your meal with one of Nana Pat's Cookie Dough Brownies ala mode, you'll be glad you saved room for dessert!
We are excited to announce that Chef Dave Cuntz has become a permanent addition to The Roost team! Dave was originally brought in as a consultant to assist with menu development but has become a vital addition to our kitchen crew. Chef Dave adds a wealth of knowledge, creativity, and possibilities to the Cuckoo’s and Roost family.
Hailey Redding, Chris & Michele's daughter, is now part of the front-of-the-house team. She is assisting with the management of both The Roost and Cuckoo's, as well as marketing for the restaurants and the Animas City Theatre. She was only one month old when Cuckoo's opened, and many long time customers have watched her grow up in the restaurant.
Our newest addition is Bar Manager, Chad Riddles, who many locals know from various bars around town! He and Chef Dave even worked together several years ago at the Strater. Chad continues to develop our wine and cocktail offerings, and he is happy to concoct a beverage you'll be sure to love!
Be sure to walk around and check out the decor of posters from previous shows at the Animas City Theatre (quite a few are autographed!), as well as the silhouettes of famous musicians (rumor has it, if you can name them all, you get a free drink, ask your server).
